BREAKFAST TIP! – TOAST, ADD A LITTLE GREEK YOGURT & MIXED BERRIES
We like to use this bread for breakfast, a dessert or a snack. It has more of a cake consistency than bread but it’s a great substitute for processed versions. Tastes great toasted and is very filling.
Homemade Raisin Bread Recipe
2 cups almond flour
2 tablespoon ground cinnamon
1 teaspoon baking soda
¼ cup honey
¼ cup coconut oil, melted
handful of shredded coconut
1 teaspoon vanilla
½ cup raisins
¼ cup walnuts (optional)
Preheat oven to 350 degrees. Spray/grease a loaf tin with Coconut oil.
Combine almond flour, cinnamon, baking soda in a medium sized bowl.
Combine eggs, honey, coconut oil, and vanilla in a large bowl. Using a hand mixer, blend until well combined.
Slowly add the dry ingredients to the wet, and continue mixing.
Fold in raisins, walnuts and coconut then pour the mixture into the loaf tin.
Bake for about 40-45 minutes, you will see that the bread is a lovely golden brown colour, or until a knife comes out clean in the centre of the bread.
