Breakfast Ideas – Granola Crunch

Our attempt at this lovely breakfast cereal that is extremely tasty. We sourced most of the ingredients from the House of Health in Central Market.

Since we first made this recipe we have it every week and cannot see a return to packet cereals it is well worth creating.

Serves 10

  • 1 cup raw sunflower seeds
  • 1 cup raw pumpkin seeds
  • 1 cup raw almonds
  • 1 cup shredded unsweetened coconut
  • 1 cup slivered almonds
  • 1/4 cup coconut oil, melted
  • 1/4 cup raw honey
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cacao powder
  • cinnamon to taste

Preheat oven to 180 degrees.

Briefly process the almonds (whole and slivered) along with the shredded coconut. You only need to pulse a few times, it doesn’t need to be anywhere near ground.

In a large mixing bowl, combine all the dry ingredients and mix well.

In a separate bowl, combine all of your wet ingredients, I melt the honey with the coconut oil as it helps when combining with the dry ingredients.

Pour your wet ingredients over your dry seed and nut mixture and mix well with a fork to ensure you coat everything.

Place the mixture onto a baking tray lined with baking paper.

Bake in the oven for 20 minutes, I look for the mixture to start turning golden brown, you might want to leave it a little longer depending on your oven.

Remove from the oven and stir around to ensure nothing burns, then add the 1/2 cup raisins over the top and place back in the oven for a further 5-10 minutes.

Remove and let cool, it tastes better cold and also develops its crunchiness as it cools.

Store in an airtight container.

We serve ours with natural greek style yoghurt and fresh fruit, you could try with your preferred type of milk too.

One of our favourite Recipes, enjoy!!!
